This healthy mint chocolate slice recipe tastes naughty

A treat to leave you feeling fresh and satisfied. 

Having a sweet tooth can sometimes seem like a curse, because all you ever want to do is overload on choccy and sugar. No judgement, we’re all about the sweet stuff here at mybodyandsoul.

The good news is that in this day and age you can actually eat something that will fulfil your cravings without totally ruining your diet, case in point, this delicious mint chocolate slice. You won’t even realise that it’s really only dates, nuts and seeds with a delicious hit of cacao powder.

Serves 10

Base

  • 350g pitted medjool dates
  • 80g coconut oil, melted
  • 100g pistachios
  • 70g almonds
  • 20g Fermentanicals sprouted chia
  • 20g Fermentanicals Sprouted Flax
  • 20g Activated Buckwheat kernals or if you like a smoother texture Fermentanicals Sprouted Buckwheat Flour

Topping

  • 200g maple syrup
  • 100g coconut oil, melted
  • 80g cacao powder
  • 10 drops of good quality food grade peppermint oil

Method:

  1. Line a 20cm square tin with baking paper
  2. Process ingredients for the base in a food processor for about a minute or until it starts to come together.
  3. Transfer to cake tin and press the mixture down with your fingers until you have a flat base.
  4. In a clean bowl gently mix together the melted coconut oil, maple syrup and cacao powder until it comes together then whisk until smooth.
  5. Add the peppermint oil and mix again then pour on top of your prepared base and refrigerate for around 2 hours or until set.
  6. Once set, remove baking paper and cut into slices. This slice stores best in the refrigerator.

Topping Ideas: sifted cacao powder, chopped pistachios and fresh mint.
